4 Large heads of Elderflowers freshly opened and fragrant ! mmmm
500G( 1 and a half lbs) sugar
2x 15ml spoons (2tbls) white distilled vinegar
4.5 Litres (8 pts) water
2 Lemons
Put flowers ,sugar,vinegar and water into a large bowl (I use washing up bowl ) Halve the lemons ,squeeze out the juice and the chop up the peel and add these to the bowl.
Stir it all up…now cover and leave overnight.
In morning ,stir again and strain into bottles to store in a cool place.
I make plenty and put mine into plastic milk bottles so that I can freeze it away for later . Chickweed x

what does the vinegar do for the fermentation process. or does it just add some tart flavor along with the lemons? i’ve seen plenty of home-wine recipes that call for citrus but i haven’t seen one that includes vinegar before, so it intrigues me.
I’ve made this but it only seems to ferment a little bit. Is that your experience chickweed? That is comes out sweet, not very alcoholic, but with a little fizz on the tongue?
