I just found a recipe for a cough syrup that called for boiling clover, mullein, white pine, and cherry bark, then mixing the juice with honey, boiling again. But I know that adding water to honey gets rid of its amazing shelflife, and I don’t know of any white pine here, or inner cherry bark to collect. So, I’m wondering if I could just infuse the clover and mullein directly into the honey, avoiding the water, and the harder to find ingredients. is there any reason this wouldn’t work?

Not at all, and infusing honey is really easy. With a lot of herbs and spices, you can just leave them in a bottle of honey for a few days and you have infused honey.
I think I’ll go make some of this right now.
